2 tablespoons honey
2 teaspoons rice bran oil, plus extra for frying
1 cup (160 g) wholemeal (wholewheat) self-raising flour
3⁄4 cup (185 ml) milk
Mix together egg, honey and oil. Add flour and stir until the mixture is smooth, then stir in milk, a little at a time.
Drizzle a small amount of oil into a frying pan on medium to high heat and pour heaped dessert spoons of mixture into the pan. When bubbles begin to appear on the surface of te mixture, turn pikelets over and allow them to brown on the other side.
Serve them plain or drizzle with honey and serve with berries or your favourite fruits.
Hint: After the first batch, I wipe the frying pan with some paper towel and oil it again. Turn the heat down to low so that the pikelets don’t get too brown; the honey tends to make them brown quicker.
