mini choc chip muffins
1⁄4 cup (60 ml) rice bran oil
1⁄4 cup (75 g) honey
3⁄4 cup (120 g) wholemeal (wholewheat) self-raising flour
1⁄4 cup (25 g) desiccated coconut
1⁄3 cup (80 ml) milk
1⁄3 cup (45 g) chopped 70% dark chocolate
Preheat oven to 180°C (350°F) fan-forced.
Whisk egg, oil and honey together until honey is dissolved. Mix in flour, coconut and milk then add chocolate.
Grease mini muffin tin with oil and fill each case three-quarters full.
Bake for 15 minutes. Makes 12
