broccolini and bean salad
2 bunches of broccolini
2 large handfuls of snowpeas
2 large handfuls of green beans
extra virgin olive oil
2 large handfuls of toasted almond flakes
Lightly steam the broccolini, snowpeas and beans so that they are cooked but still a little crunchy (approximately 3 minutes in a steam saucepan).
Place greens on a serving plate to cool. Season with a small amount of salt. Drizzle with balsamic vinegar and oil and then toss.
Scatter the toasted almond flakes over the salad and toss, (to prepare toasted almond flakes, place on baking tray for 8 minutes in oven on 180°C (350°F) fan-forced).
