After constant searching for healthy treats for my children, reading labels on the back of packages of food full of additives, preservatives and lots of sugar, I realised that the best way to ensure that my children were eating foods full of goodness was to bake them myself.
However, I didn’t want to just make healthy snacks that looked ‘healthy’ and tasted ‘healthy’. I wanted my children to be able to enjoy treats that looked and tasted like ‘normal’ biscuits, cakes and desserts, but were made from healthy ingredients.
I began experimenting, baking healthy and delicious snacks that the whole family could enjoy without the use of added sugar, artificial sweeteners, butter, margarine or white flour. This led to my first cookbook, Have Your Cake, which was published in 2011.
Tasting new foods has been a wonderful experience that my children and I have enjoyed together. I was amazed that they began tasting and snacking on the ingredients I placed on the bench while I was preparing the recipes, like dried figs, organic apricots and, of course, dark chocolate. When they began scraping the leftover mixture from the bowl while I was cooking, I knew that the recipe was going to be a success.
My recipes aren’t about weight loss and counting calories, but about cooking using healthy ingredients. You can still have delicious meals and even treats, using healthy ingredients that are high in fibre and low in sugars and saturated fats, and without lots of preservatives, additives, and artificial flavours and colours.
My second cookbook, Healthy Home Cooking for Kids, published in 2013, is filled with delicious snacks, meals, sides, fruit snacks and birthday party treats that the whole family can enjoy. The recipes are also quick and easy to prepare, using ingredients that are easy to work with and accessible.
My latest cookbook, My Secret Ingredient', has just been released. With over 120 delicious, easy, quick, healthy, real recipes to cover every meal of the day, it is a must for every home cook's kitchen.
All the ingredients that I use are available from the supermarket.
